Orzo (or Macaroni) with Feta Cheese

1/4 cup of olive oil
3-4 cloves of fresh garlic, pressed
1 med. onion
1 T fresh basil (or 1tsp dried)
1 T fresh parsley (or 1 tsp dried)
(Optional 1 cup sliced mushrooms)
1 lb orzo (or elbow macaroni)
1/2 to 3/4 lb (or more, depending on personal preference) feta cheese, crumbled

Crumble feta cheese and set aside. Heat oil in heavy dutch oven on stovetop. Add garlic, onion, herbs, and optional ingredients, sequentually, and saute until cooked, but not brown. Cover and remove from heat. As pasta is cooking, cook orzo (or macaroni) al dente and drain well. Add pasta and feta to dutch oven, stir to blend, and add salt and pepper to taste. Serve immediately (hot).
